Royal Baking Powder is a mixture of bicarbonate of soda (baking soda), cream of tartar (an acid), and a moisture absorber, such as cornstarch. When combined with moisture and heat, such as during the baking process, it produces carbon dioxide gas bubbles, which cause doughs and batters to rise and become light and fluffy.
