Traditional Kerala Avial Recipe
Avial is a wholesome and nutritious mixed vegetable curry cooked in a coconut and yogurt base. This traditional Kerala Avial recipe is an irreplaceable part of any Onam Sadya feast.
Ingredients:
- 1 cup mixed vegetables (carrot, yam, raw banana, beans)
- 1 cup grated coconut
- 1/2 tsp turmeric powder
- 2 green chilies
- 1 tsp cumin seeds
- 1/2 cup thick curd (yogurt)
- 1 tbsp coconut oil
- A few curry leaves
- Salt to taste
Instructions:
- Boil the chopped vegetables with turmeric and salt until soft.
- Grind coconut, green chilies, and cumin seeds into a coarse paste.
- Mix the paste into the vegetables and cook for 2-3 minutes.
- Lower the flame and add yogurt. Stir carefully.
- Top with curry leaves and coconut oil. Mix gently.
- Serve warm with rice during your Onam celebration.
